- 2 potatoes, peeled and cubed
- 1 tablespoon tomato paste
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Couscous, prepared according to package instructions

Instructions:
1. In a large pot, heat some oil over medium heat. Add the onions and garlic and cook until softened.
2. Add the lamb pieces to the pot and brown on all sides.
3. Stir in the tomato paste, cinnamon, ginger, cumin, salt, and pepper.
4. Add the chopped tomatoes, chickpeas, carrots, and potatoes to the pot.
5. Pour enough water to cover the ingredients and bring to a boil. Reduce heat and simmer for about 1-2 hours, or until the lamb is tender.
